The Eunice Cajun Mardi Gras Festival didn’t disappoint Sunday beginning with an old time boucherie .This long-running tradition began as a way to survive the winter months with plenty of meat. Today, it is a community celebration that begins early in the morning with the butchering of the hog. To help burn off the calories from the boucherie there were five bands playing throughout the day both Cajun and Zydeco. To round off the day the annual kids Mardi Gras parade rolled down Second Street with no less that forty floats participating. To finish off the day the local downtown bars were hosting Super Bowl parties for all the football fans. The revelry continues Monday and Tuesday with more downtown bands, cooking demonstrations, history of the Mardi Gras costumes and the Courir de Mardi Gras run which begins early Mardi Gras day.
