Tom and Eula Morris Savoie (1926-2010) opened Savoie’s Grocery on the old Port Barre Road east of Opelousas in 1949. They purchased the store so Eula could work and still care for her growing family. In 1955 Savoie’s began making sausage and other pork products. People loved Savoie’s products, and as the company grew new products were added, including real Cajun Roux in the 1960s. Working hard, Eula grew the business to be one of the most successful in Louisiana. Today Savoie’s, run by Freddie Lafleur, sells it famous Cajun sausage, roux and other products in Louisiana and across the United States. In 2018, Eula Morris Savoie was inducted into the St. Landry Parish Woman Hall of Fame. Ms. Eula is pictured in this photograph during the early years of the business. (Courtesy of Savoie’s Sausage.)
